| Chopped Habanero pepper | 1 piece |
| Mayonnaise | 3 tbsp |
| Sesame oil | 1 tbsp |
| Cambray onion | 1 tbsp |

| Tuna | 1 fillet |
| Thinly sliced Habanero peppers | 1 piece |
| Mayonnaise | 3 tbsp |
| Sesame seeds | 1 tsp |
| Rice Vinegar | 1 tsp |
| Black sesame seeds | 2 tsp |
| Siracha sauce | To taste |
Instructions (Rice)
- Rinse the rice in a strainer or colander under cold running water until the water runs clear
- Combine rice and water in a saucepan over medium-high heat and bring to boil. Reduce heat to low and cook about 20 minutes
- Allow to cool for 15 minutes. Then add rice vinegar, sugar and salt.
- Add the rice to a baking dish, lined with food saran wrap. Compress the rice down and flatten it tightly; refrigerate.
Instructions (Toppings)
- Tampico Topping: Finely chop an habanero pepper, onion, cambray onion and surimi. Add all the ingredients to a bowl with mayonnaise and mix.
- Tuna Topping: Cut the tuna into small pieces and transfer to a bowl. Add sesame oil, sriracha sauce, mayonnaise and soy sauce; mix thoroughly
Instructions (Crispy Sushi Bites)
- Carefully remove the rice from the baking dish and cut the rice cakes into 1 1/2 cm squares using a warm knife by dipping the knife in warm water.
- Heat some sesame oil in a skillet and fry the rice cakes
- Now we assemble the crunchy rice sushi
- Tampico sushi bites: layer with avocado, then add the tampico mix. To decorate add on top some chopped chives
- Tuna sushi bites: layer with avocado, then add the tuna mix. To decorate add on top some black sesame seeds and sliced habanero peppers
