Finely chopped onion | 1 medium piece |
Habanero pepper | 2 pieces without seed |
Maple honey | 60 ml |
Espresso coffee | 60 ml |
Apple vinegar | 60 ml |
Brown sugar | 2 tbsp. |
Salt | 1 pinch |
Freshly ground black pepper | 1 tsp |
Instructions
- In a large skillet, place the bacon and cook over low heat until golden and crispy.
- Add finely chopped onion to the bacon and cook until translucent and slightly golden.
- Add chopped habaneros to the skillet with bacon and onion. Cook until fragrant.
- After cooking the bacon, onion, and habanero, add honey, espresso coffee, apple cider vinegar, and brown sugar. Let the mixture simmer over medium heat to allow all the flavors to blend together.
- Season with sea salt and black pepper to enhance the flavors of the jelly.
- Remove the skillet from the heat and let the mixture cool to room temperature.
- After the mixture has cooled down, transfer it to a blender and blend until it is smooth and consistent. This will give you the perfect jelly texture.
