| Cook and shredded chicken breast | 2 cups |
| Corn Tortillas | 10 tortillas |
| Oil | 2 tbsp |
| Tomatillo | 10 pzas |
| Jalapeno pepper | 1 piece |
| Serrano chili pepper | 2 pcs |
| Habanero pepper | 3 pcs |
| Cilantro | 1/2 cup |
| Cream | 1/4 cup |
| Manchego cheese | 1 cup |
Sauce Instructions
- In a saucepan add water and cook the tomatillos, habanero peppers, jalapeno peppers, serrano chili peppers for 15 minutes
- Once the peppers and tomatoes are cooked add them to a blender with onion, coriander and cream.
Enchiladas Instructions
- Heat two tablespoons of oil in a skillet and warm the tortillas one at a time.
- Fill the center of the tortilla with the chicken and roll it up.
- In a baking dish layer with sauce at the bottom then arrange the enchiladas on top. Cover the enchiladas with the rest of the sauce and sprinkle with cheese
- Bake for 15 minutes
- Serve immediately with some cream on top and enjoy!
