Onion 1/4 piece
Garlic clove 4 pcs
Habanero pepper 4 pcs
Green tomatoes 9 pcs
Cilantro 1/4 piece
Cambray onion 3 pcs
Instructions
  1. In a large pot, boil the pork ribs in water over medium heat and season them with salt.
  2. Meanwhile, roast a quarter of an onion, four garlic cloves, four habanero peppers, and the tomatillos in a dry griddle or skillet until they are slightly charred.
  3. Once roasted, place all these ingredients in a blender along with fresh cilantro and a little water. Then, blend until you have a smooth and homogeneous sauce. Let the sauce rest.
  4. When the ribs are cooked, transfer them to a skillet with a bit of hot oil and fry them until they are golden on both sides. Add the scallions to give them a touch of freshness.
