Instructions

Prepare the Red Sauce

  1. Roast the Red Fresno peppers, tomatoes, half an onion, and a garlic clove in a pan until they are charred and well-roasted.
  2. In a blender, combine the ingredients with ¼ cup of chopped cilantro and one tablespoon of flour. Blend until smooth.
  3. In a medium pan, heat one tablespoon of oil and add the sauce. Season with salt and pepper, and cook for about 10 minutes until it thickens slightly. Set aside.

Prepare the Green Sauce

  1. For the green sauce, follow the same procedure as for the red sauce. Roast the Red Fresno peppers, green tomatoes, half an onion, and a garlic clove.
  2. Blend the ingredients with the chopped cilantro and one tablespoon of flour to thicken.
  3. Pour the sauce into a pan, season with salt and pepper, and cook for about 10 minutes until it thickens slightly.

Assemble the Enchiladas

  1. Lightly heat the tortillas in a pan with a bit of oil to soften them.
  2. Fill each tortilla with some shredded chicken and fold them in half. Place the enchiladas on a plate: cover one side with the red sauce and the other side with the green sauce.
  3. Garnish with cream, crumbled fresh cheese, chopped cilantro, and avocado.
